VINIFICATION AND AGEING

For the production of Amarone the best scattered bunches are selected, the one exposed to the sun in the most optimal way, and are placed in 7kg crates for 3 months. During these months the weight loss is about 40% of the original grapes. The grapes are then pressed in January in steel wine vessels. The fermentation completes at 18° in about 25 days. A part of the wine is then aged in oak barrels with a capacity of 500 liters, the other part is aged in 20 hectoliters barrels for 24 months and subsequently in 0,75 liters bottles for 12 months.
