The Amarone della Valpolicella Classico Ca’ Celeste is a red dry, still wine, produced with Corvina-Corvinone-Rondinella grapes, with an alcohol content of 16°.

PRODUCTION AREA
Veneto, Valpolicella Classica from clayey calcareous and tuffaceous soil that gives freshness and elegance to this wine.

TRAINING SYSTEM
Pergola veronese with a density of vine- yard of about 3,300 vines/Ha, and vine older than 50 years.

VINIFICATION AND AGEING
For the production of Amarone the best scattered bunches are selected, the one exposed to the sun in the most optimal way, and are placed in 7kg crates for 3 months. During these months the weight loss is about 40% of the original grapes. The grapes are then pressed in January in steel wine vessels. The fermentation completes at 18° in about 25 days. The wine is then aged partly in 500 litres oak barrels for 24 months, and partly in 20 hl oak barrels. The aging process ends in 0,75 litres bottles where the wine rest for about 12 months.

APPEARANCE
Intense, deep ruby red, similar to garnet red.

AROMA
Complex fragrance, with spicy notes, hints of licorice, pepper, cocoa and flint. Prominent notes of cherries and small wild berries, hints of balsamic notes on the nose.

TASTING NOTES
Full bodied wine, velvety and smooth, delicate and elegant tannin taste.
